If you mean the torrent packs, it is possible to start the torrent and then uncheck all of the demos except for the ones that you would like to download.
Yup do as Dark Scyth says, we even have a little guide that is linked to in each Demo pack explaining how to only download certain files and some settings you might want to configure on uTorrent.
