Sony is now on the 3K (3000) units. Which are the newest slims and they are on 3.60 or higher, it's also worth noting that these newest systems can't use HD unless it's with an HDMI cable. The older systems could achieve HD with the component cables but Sony modified the system to only allow HD with HDMI cables which was purely a gimmick to boost sales in HDMI cables. There are mod chip solutions that can downgrade the console and even dual boot firmwares, 3.55 and 3.72 but each firmware requires it's own hard drive. I'm also unsure if the downgrade would work as the consoles preset OFW is above that of 3.55, it is possible that could cause problems.

If you can find a PS3 with that low of firmware, then go for it. If you can't get one that is below 3.55 but used to be when it first came out, it would be possible to downgrade with a mod chip. There is a mod chip for the slims that is a clip on, so no need for soldering and it could downgrade to 3.55. For firmwares I recommend Rebug 3.55.2 and if you need a backup loader, get Multiman.
