Copy the PS3 folder from the zip to a FAT32 USB stick (it has to end up as PS3/UPDATE/PS3UPDAT.PUP), plug it in, and choose Settings > System Update > Update via Storage Media.
Putting a new or blank hard drive in? The PS3 will ask for the system software from USB when it starts, and this same stick does the job.
